Cave Mont Blanc autochthonous vineyard grows between 900 and 1.200 meters above sea level on terraces on the slopes of the mountains, which allow these extraordinary vineyards to survive heroically. The total respect of the territory and its morphology encourages members of Cave Mont Blanc to carry on their philosophy seeking in the quality, wonder and nature of this land.
Cave Mont Blanc is the only winery in the Aosta Valley to produce Metodo Classico DOC according to the techniques developed from 1700 in Champagne and used from mid-1900 in Savoy. For the prestigious ice wine Chaudelune Vin de Glace, on the other hand, the winery owns oak barrels, used by applying in fermentation and maturation the classic batonage and aging the ancient Mediterranean technique of oxidation.
All the wines produced by Cave Mont Blanc, either sparkling or still, extreme or ice wines, are produced using exclusively Prié Blanc, an indigenous white grape. This grape is particularly resistant at high altitudes, it buds late and ripens early and the people at Cave Mont Blanc grant it the ability to express all its character, in terms of both authenticity and originality.
